Stick's Jam-Rock Fried Chicken




3 chicken breasts
slug of Jamaican dark rum
half a slug ginger beer
tablespoon allspice
pinch of salt
pinch of pepper
flour




take chicken breasts. cut in half and jab with a knife couple of times on each side.

pour the rum and ginger beer into a bowl with the allspice and a pinch of salt and pepper.

put the chicken pieces in the rum mixture and leave to marinate.
(the longer the better but an hour or 2 will be good enough)

heat a pan with about an inch of oil in the bottom.

take each piece of chicken and quickly dip in the flour to coat it and put them all in the hot oil. (careful of splashes!)

wait til they are golden brown and tender and enjoy.
