Stick's simple Mole Poblano


3 or 4 hot chillis finely chopped( or to taste baring in mind choc probs make it bit smoother)
2/3 bar of lindt's dark chocolate
1 onion very finely chopped
2 or 3 cloves garlic very finely chopped
tablespoon toasted almonds
tablespoon toasted sesame seeds
6 large tomatoes chopped
150ml chicken stock
teaspoon ground coriander
teaspoon cinnamon
chicken breasts/pieces


finely chop onion, chillis, garlic and tomatos. (or if you got a blender, put everything except the stock, chocolate and the chicken in there. )

fry the chicken until brown

add the chopped onions, chillis and garlic

when onions soften and brown, add the chicken stock, almonds and sesame seeds, ground coriander and cinnamon

stir that up til its all mixed up well, simmer it for a bit until it thickens and add the chocolate in squares n stir in slowly to melt it in.


garnish with more sesmae seeds and serve with rice and refried beans
